Food

Okay, so in order to enjoy this post there are a few things that you should know about my mother first. Aside from being a perpetually cold, list making, lemon cake addict (maybe you didn't even know that much about her), she is also a heavy milk drinker...make that RAW milk drinker! With mom out of the house these last few weeks our weekly milk supply has exceeded our drinking capacity, leaving us with a surplus of that delicious white stuff (how much does she drink in a week, you ask? Read on...). After some quick thinking we decided to put the extra gallon (yes, you read that right...GALLON) to good use, and attempt to make some "30 minute" mozzarella cheese.

The photo below is of a very nasty looking pot of curds and whey (poor Miss. Muffet!).




Not very appetizing. If it were gray I would say we were cooking a brain.




There, this is much better... now all we need is some olive oil, balsamic, basil and a thick, juicy tomato. We'll have to wait until summer for that. Eating seasonally (that is, eating what is in season when it is in season) seems tough, but it teaches you enjoy the little pleasures of life more when you have to wait for them. As a wise old man always says, "Sometimes the anticipation of the thing is better than the thing itself." (...and he's not old, by the way... just wise ;-)




Now, since tomatoes are a good four months out, what are we to do with all of this fresh mozzarella?




Well, first we caramelize some onions and saute some garlic....




...then we pick some fresh asparagus and spinach from the garden (bonus points if you can guess what we are making before hand)...




Are you still not sure?




We cover the crust (that's a hint) with a thin layer of pesto (frozen from our bounty of basil this summer...preserving is an important skill to learn when eating seasonally! Yes, we still eat peaches and tomatoes in the winter... they are just frozen or canned).





PIZZA, my friends!!! We are making pizza for dinner.





And there you go! A low budget, vegetarian meal that tasted great even the next day!
